Now the months are getting colder, here are some of my must-haves or "wants"...


























One of my favorite veggie cookbooks has to be the River Cottage Veg Cookbook by Hugh Fearnley-Whittingstall. Previously a well known meaty chef, he disappeared and returned super fit and... you guessed it- veggie.

Although some recipes do contain eggs or dairy, they're all very easily veganized.




One of my favorites has to be his mushroom "stoup", a hearty mushroom stew/soup!

I did change up a few things like substituting celery for leeks since Adam hates celery but essentially i followed the recipe, which, you can find here!

So i know i mentioned in my last video that my #fashionfriday video would be my fall faves but this internet is killing me. So, as to not leave you empty handed (or would that be empty-eyed?), i wanted to at least share with you my secret to fabulous non-leather shoes: Truffle!


I'm not talking truffle as in the delicious, yet slightly controversially found mushroom, i'm talking Truffle at ASOS.




Not only is everything synthetic and cheap, they literally have every style of shoe you could imagine.
From boots to platforms to converse-style sneakers and beyond...

I don't know about you guys but it certainly seems like fall is upon us (... did winter ever even leave?!) so naturally I instinctively made one of our favorite soups to warm our cockles. This one is super easy, full of flavor and if you're a curry/ root veg fan, you'll love it!




 Ingredients:


  • Olive Oil
  • S+P
  • 1 Yellow Onion Chopped
  • 4 Garlic Cloves Chopped (adjust depending on the vampire population in your area)
  • 2 Heaped tsp Curry Powder
  • 1tsp Spicy Curry Powder (again, adjust to taste)
  • 1/2 tsp Stock Goo (see below, optional)
  • 5 Large Parsnips Chopped
  • 1 Apple Chopped
  • 32oz Carton Veg Stock




How to make it:

  • Heat up olive oil and S+P in a large pan on low-medium heat (my stove is insanely hot).
  • Add chopped onion & garlic, along with the curry powder and stock goo. Cook until the onions begin to go transparent and take on the curry color (5-10 min).
  • Add your chopped parsnips, apple and a little more olive oil so everything has a light coating and cook until the parsnips take on the curry color and begin to soften slightly (10-20min).
  • Reduce heat to low for an additional 5 min then add 32oz veg stock.
  • Simmer on low with the lid on basically until you want to eat it, i left it for approximately 30min-1 hour... i got distracted.
  • Remove from heat and let it cool enough so you can use an immersion blender without burning yourself if it splashes.
  • Taste and add any additional seasoning you might like.
  • Serve with some crispy frickin bread.


Since i didn't have time to make a #fashionfriday video for this week, i figured i'd grace your eyes with two posts to make up for it.

While making my earlier post, i came across the brand Standard Issue on Karmaloop and immediately fell in love. Clearly the next logical step was to share my finds...

While in Hawaii i had probably the best soup i've ever tasted so as soon as i got home i had to try and recreate it- here's my best effort.

Ingredients-
1 butternut squash (mine was fairly large this time)
1 onion (white or yellow)
4 garlic cloves
drizzle of olive oil
1 32oz carton organic vegetable stock
1 large nub of ginger (nub size dependent on your taste, add less to start if you're not sure)
2 tsp tamari
1 pinch nutmeg (again, depending on your taste)
salt and pepper as needed
1/2 a lime
1 can organic unsweetened coconut milk
a few sprigs of cilantro to top (green onions, coconut flakes or a drizzle of balsamic works well, too)



  • Preheat oven to 350F
  • Halve your butternut squash, quarter your onion and prep your garlic cloves. Place parchment sheet on a baking tray and cover lightly with olive oil.
  • Place butternut squash face down on the baking sheet and place the onions and garlic around it. Put it in the oven for 45min.
  • Put the onion and garlic aside in a bowl and return the squash to the oven for a further 10-15min until squash is soft and scoopable.
  • Remove squash from the oven, carefully turn it over on the tray and put it aside to cool.

  • In the meantime add your stock, onions and garlic to a saucepan and once your squash is cool enough to handle, scoop out the contents (excluding the seeds) and add that to the pan, too.
  • Bring mixture to a boil and add the ginger, tamari, nutmeg, salt and pepper (bare in mind the tamari adds salt before adding more), simmer for 20 min.

  • Put a couple of scoops of the coconut cream from the top of the can aside to top your soup with later then, using either an immersion blender or upright processor (i used my trusty vitamix), blend soup mixture together with the rest of the coconut milk/cream and the juice of the lime.
  • Return the soup to the stove to warm if needed or serve immediately with a little coconut cream and cilantro on top.
