Mmmonday- Ginger Carrots

This side has 3 of my most favorite ingredients ever: carrots, ginger & garlic. Not only is it delicious but its packed with lots of goodness for your body to fuel up on.


  • Carrots
  • Ginger
  • Garlic
  • Olive Oil
  • Ginger Ale

What to do with them-

  • Wash/brush carrots with a veggie brush and remove any wipsy bits.
  • Slice length ways into whatever size you'd like.
  • Add olive oil, some ginger slices and sliced garlic cloves into your frying pan and fry those bad boys up for a few minutes until you start to smell the yum being released.
  • Add the carrots to the mix and continue to cook on a medium heat, once they start to soften up and brown a little i added a good glug of ginger ale and let it all simmer. (be careful when adding the GA so you don't get spit on)
  • Once most of the liquid has been cooked off and the carrots are tender... go ahead and eat it!

Amounts will depend on your tastes so just use your common sense and add little by little if you're not sure :) Add less ginger if you don't like the heat!
