Mmmonday- Kale & Plum Salad

I can't take credit for this one, my friend Jake shared this with me and i've been hooked ever since.
Its a super easy salad to make as a side to bring to summer BBQs or just to enjoy at home.


Ingredients-


  • A bunch of kale
  • 1 Avocado
  • 2 Plums
  • A handful of blueberries (or any berries you prefer/ have in your kitchen, alternatively skip this all together and add another plum)
  • Salt & Pepper
  • Olive Oil

What to do with them-

  • Wash the kale, plums & blueberries and dry off on paper towel/ salad spinner
  • Add the avocado, plums, berries, S&P and olive oil into a blender and blend until smooth, the amount of olive oil will depend on the consistency you like so add a little at a time.
  • Tear up the kale into whatever size you want and put in a mixing bowl.
  • Add the dressing to the kale and use your (clean) hands to massage the crap out of that kale. This massage is what makes the kale delicious opposed to weird and tough... we all need a little massage now and then after all.
  • Eat!
