Mmmonday- Arugula Pesto

Its no secret that i'm fond of making my own vegan pesto but i decided to change it up a little and try making arugula pesto. If you've not tried arugula (rocket for the Englanders out there), its a dark leafy green with a slight (black) peppery taste that is incredible in salads.


  • 1/2 cup pine nuts (you could use almonds or walnuts instead)
  • 1 or 2 garlic cloves
  • 2 cups arugula (really pack it in to your measuring cup)
  • 1/4 cup nutritional yeast 
  • 1/4 cup miyokos kitchen aged english sharp farmhouse "cheese" (you can skip this if you don't have it, obviously)
  • 1 cup olive oil
  • Salt and Pepper to taste

Chuck it all in the blender and blend!

Use it on pizza/pasta/sandwiches etc.
