Simple, tasty roasted veggies.

I frequently crave a huge bowl of veggies and this is my favorite way to prepare them.

Whether you're making these to use in soups, on pizzas or to just eat plain with some quinoa; heres how you do it!



Ingredients:
  • Vegetables (use any you like... peppers, onion, mushrooms, sweet potato, tomatoes, garlic, cauliflower... you can do this with just peppers to make a roast red pepper soup)
  • Olive oil
  • Ground pepper
  • Lemon and herbs to taste

What to do with them:
  • Pre-heat oven to 350-400F.
  • Wash/peel/chop veggies to whichever size you like.
  • If you're using sweet potato, it can take a little longer than anything else to cook so i put my chopped sweet potatoes in a bowl with a little water and put them in the microwave for 2 minutes.
  • Run some olive oil around your roasting dish/pan and dump in your veg.
  • Use an additional drizzle of oil if needed and add pepper, herbs and lemon. (i like to chuck the lemon in after i've squeezed it, too)
  • Put it in the oven for 20-30 minutes. Keep an eye on them though since this might vary.
  • Once they're golden brown and smelling like heaven, remove from the oven, let cool a little and enjoy.





What you can do with them now they're cooked:
  • Top some couscous or quinoa with them.
  • Put them on a pizza.
  • Make a sandwich out of them with some hummus spread on the bread and fresh arugula.
  • Whiz them up in the blender to make soup. Just add some stock to thin it out a little.
  • If you just did peppers you can make delicious roasted red pepper hummus now.
  • Eat them from the pan like the animal that you are. (me)
