Quick Gluten Free, Dairy Free Garlic Bread (recipe)

Tuesday, February 04, 2014
I'd say this is less of a recipe and more of an assembly of ingredients but its delicious none-the-less.
My mum makes the best vegan g-bread and i often crave it but due to Adam being quite gluten intolerant i've also limited my wheat consumption just to make things easier.

We've successfully veganized and de-glutenized pesto linguine so garlic bread came next.

I like to keep things as simple as possible and this is the ultimate Rhiancipe with only 3 ingredients!

Ingredients-
Gluten free sub rolls (as large or small as you like)
A stick of butter
Garlic
(amounts will vary on bread size and how much you love garlic, use your best judgement)

  • Pre-heat the oven to 350f
  • I melted around half a stick of earth balance in a bowl and added 3 crushed garlic gloves (chop them finely if you don't have a garlic press). Mixed it all in and returned it to the fridge for about 5 minutes.
  • In the mean time i sliced the sub rolls (not through entirely) at an angle so the garlic butter has a bigger surface area to melt into.
  • Using a teaspoon i dealt out the garlic butter into each fold, i just go back in and distribute more in each slice until its all used up.
  • I made the sub a little boat out of foil and put it in the oven for 10 minutes.
  • I switched the oven to broil and watched the sub until it had browned and gone a little crispy (this only takes a few minutes to keep an eye on it!)

If you know of any GF bread that doesn't also contain corn, let me know!
