Lentil Soup (recipe)

Might seem like an odd one to kick off summer with but i wanted to bring this back from the depths of my old blog. Soup is a super easy way to get lots of veggies in your body without even knowing it and also a great way to use things up.




1 large onion chopped 
1 lb. carrots chopped 
3 or 4 stalks celery chopped 
2 cloves garlic chopped 
1 bag split lentils (red) 
4 to 6 cups of veggie stock 
1 tsp cumin 
Salt & pepper to taste 

  • Sauté onion, carrots, and celery in 2 tbsp olive oil until onions become translucent . 
  • Add garlic and cumin and cook for 2 minutes . 
  • Add lentils and cook until coated with oil and glistening. ( about 1 minute). 
  • Add enough stock to cover lentils and veggies. 
  • Bring to boil, then lower heat and simmer until veggies are fork tender. ( you may have to add more stock if lentils expand a lot). 
  • Taste and add salt and pepper and other spices if desired. 
  • Blend with stick blender or mixer and serve!
