Tofu Scramble Recipe

My Lazy B**** meal for today is a tofu scramble! Another thats easy and customizable even for picky eaters! Oh, and theres protein.



Ingredients:

  • Extra Firm Tofu
  • Pepper cut into bitesize pieces
  • Spinach
  • Oil
  • Nutritional Yeast
  • Other seasoning you fancy
(How much, you ask? Eyeball it!)


How to:
  1. Heat some olive oil in a pan on medium low while you chop up any veggies you're using
  2. Add veg to the oil followed shortly after by your crumbled up tofu
  3. Add in your nutritional yeast or other seasoning you fancy
  4. Cook on medium until the veggies start to crisp up or brown and the tofu is nice and coated in any juices
  5. Add your spinach last and stir a few more minutes
  6. Plate, season and enjoy!

  1. Have you tried Veganegg?? I haven't mastered cooking it yet but curious how it compares to scrambled tofu

    1. I have! Its definitely fun and cool to experiment with but ultimately i like tofu scramble because its easier and i think the nutritional content is a bit better, especially since i tend to do scrambles when i really want to fill up!
