Here are 3 of our go-to easy vegan dinners! Easy yummy and guilt-free.

Stew & Dumplings

Stew-

  • Olive Oil
  • Onion
  • Carrot
  • Potatoes
  • Herbs
  • Faux meat
  • Vegetable stock
  • Dried mushrooms
  • Peas
  • Beans
Dumplings-
  • 1 cup All Purpose Flour
  • 1/2 tbsp Baking powder
  • Salt
  • Wholegrain Mustard
  • 1/2 Cup Coconut Milk
  • 2tbsp Olive Oil
  • Additional seasoning
You can really use up any veggies you have in this and ours varies all the time. Root veggies are always a hit but experiment and see what you like!


Pesto Linguine

Pesto-
  • 1/2 cup pine nuts 
  • 1/2 cup nutritional yeast 
  • 1/2 cup olive oil 
  • 1/2 cup cashew cream
  • 2-4 cloves garlic 
  • 1 small lemon's juice (i used 1/2 of a large lemon) 
  • 3x 1oz packs of basil 
(this is about how much i make when i'm just making enough for 2)

The rest-
  • Wholewheat linguine
  • Asparagus
  • Portobello Mushrooms
  • Cherry Tomatoes
  • Kalamata olives
You can skip some toppings if you like and just throw on some toasted pine nuts or even come up with toppings of your own.


Pesto Pizza
Pizza... the old classic! Great paired with some greens... we especially love arugula tossed in some olive oil, sea salt and vegan parmesan.

  1. The stew & dumplings is delicious! Try adding 2 tablespoons of apple cider to your dumpling mix, so good!
